Change Varnish Cache Expire time
I would like to be able to configure the Varnish Expire Cache setting to something longer than 4 hours. I think 4 hours is too short. I would set it to a week or even a month, and just have it clear the cache when a page is updated.

Use Let's Encrypt certificate for Cloudways database manager (8082 port) instead of a self signed cert
Since we all can use Let's Encrypt for free (basic needs), why don't you automatically setup LE cert for database manager rather than using self signed cert which gives browser warnings.

Enable or Disable Short Open tag

Can we please please get a wild card SSL certificate on the cloudwaysapps.com domain
I am constantly deploying dev environments for development/plugin updates. Many of the WP/Woo plugins need an ssl cert to work properly.
The .cloudwaysapps.com domain that these are deployed on does not have a wildcard ssl certificate meaning our dev environments have plugin conflicts. Wildcard SSL certs are available for less than US$50 per year. I am more than happy to pay for it.
If this could be put in place as soon as possible it would be hugely appreciated. You can invoice me for the cost no worries.

Allow OPCache Settings
Allow OPCache Settings to be managed by us. I've tried to do it so via php.ini and .htaccess directives, but neither has worked with some few values.
Also it's kind of annoying to have to talk to the support team everytime I need something to be changed.

You can already control post_max_size via the “Upload Size” item that you have in Server Settings.
This sets to whatever value you define the following parameters:

Exclude pages or URL's from Varnish
I would like to suggest having the option to exclude certain pages or URL's from Varnish. Most of the time Varnish is great, but in some instances it can cause issues. One particular instance right now is a very typical Wordpress + WooCommerce setup where Varnish causes the site to not save items to the cart. I did heaps of testing and it's directly a Varnish issue.
However it would be great to keep Varnish on parts of the site where it doesn't conflict, because the performance gains are fantastic. Would be a great addition to the console.

Add APC Settings to the Server Control Panel
Instead of having to contact support or use .htaccess files to manage APC settings, having the APC Settings directly on the dashboard would be nice

Add mysql default encoding to server settings
Not sure if it's a bug in the installation script or a feature, but, currently the default charechter encoding is set to NL (if I remember correctly)
